{"id":1266776,"date":"2024-07-17T13:53:12","date_gmt":"2024-07-17T11:53:12","guid":{"rendered":"https:\/\/asc-aqua.org\/?post_type=recipe&#038;p=1266776"},"modified":"2024-08-02T13:27:09","modified_gmt":"2024-08-02T11:27:09","slug":"trout-seasonal-vegetable-medley-with-citronette","status":"publish","type":"recipe","link":"https:\/\/asc-aqua.org\/seafood-recipes\/trout-seasonal-vegetable-medley-with-citronette\/","title":{"rendered":"Trout with Seasonal Vegetable Medley, Coulis and Citronette"},"content":{"rendered":"\n<div class=\"block content bg__white\">\n\t\t<div class=\"container\">\n\t\t\n\t\t\t\t\t<div class=\"row content__row\">\n\t\t\t\t\t\t\t\t\t<div class=\"content__col col-12 col-lg-12\">\n\t\t\t\t\t\t<div class=\"content__col--left\">\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<div class=\"content__block--wysiwyg\">\n\t\t\t\t\t\t\t\t\t\t\t<ol>\n<li>Coat all fillets in extra virgin olive oil.<\/li>\n<li>Season both sides of fillet with all seasonings.<\/li>\n<li>Cover with plastic wrap and let rest at room temp for 20 minutes.<\/li>\n<li>Pan sear for 90 seconds on each side over medium to high heat, or grill for 45 seconds per side.<\/li>\n<\/ol>\n<p class=\"caption__large\">Vegetables<\/p>\n<ol>\n<li>Grill all vegetables to add char, set aside to cool at room temp until they can be handled.<\/li>\n<li>Cut the corn from the cob.<\/li>\n<li>Cut all remaining vegetables into bite sized pieces.<\/li>\n<li>In a saut\u00e9 pan add extra virgin olive oil and heat.<\/li>\n<li>Once the oil is hot, add the vegetables and lightly saut\u00e9.<\/li>\n<li>Once vegetables are saut\u00e9ed, add the citronette, salt and pepper while the vegetables are hot and then serve.<\/li>\n<\/ol>\n<p class=\"caption__large\">Citronette<\/p>\n<ol>\n<li>Add orange juice, lemon juice, thyme, garlic, shallot and Dijon to a blender.<\/li>\n<li>Blend at medium speed until incorporated.<\/li>\n<li>Continue to blend and slowly add oil until emulsified.<\/li>\n<li>Taste then adds salt and pepper to taste.<\/li>\n<li>If the citronette is too thick, add a small amount of water while blending to adjust to desired viscosity.<\/li>\n<li>Contrarily, if you desire more thickness, add more oil while blending.<\/li>\n<\/ol>\n<p class=\"caption__large\">Red Pepper Coulis<\/p>\n<ol>\n<li>Drain roasted red bell peppers over a sink.<\/li>\n<li>In a saut\u00e9 pan combine garlic, roasted shallots, garlic confit, Shery vinegar, garlic oil and extra virgin olive oil. Bring to a simmer and turn off heat.<\/li>\n<li>Once cooled, combine mixture in a blender with the bell peppers and blend until smooth.<\/li>\n<li>Pour into a sauce pot and reduce until it coats the back of a spoon.
