Patrons of Bamboo Sushi in Oregon will be the very first to in America to order from a menu featuring the ASC logo. This mark can only be found on seafood that is responsibly produced according to the highest environmental and social standard for farmed seafood in the world. The national debut of our logo on a restaurant menu coincides with the introduction of the new menu at one of Portland\u2019s most popular sushi spots. You can find the little green fish next to the ASC certified Geoduck raised by Taylor Shellfish, which can be enjoyed as Yakumi, Sashmi or Nigri.<\/strong><\/figure>\n

When it comes to the world of sustainability, there are a select few companies that set the standard when it comes to matching philosophy with\u00a0 <\/span>verifiable best practices. And what you often find amongst that number is an enduring and comprehensive commitment to adopting best practices. While Bamboo Sushi is understandably proud to be distinguished as the first in the nation to have an ASC logo on their menu, this achievement is but one amongst many in their ongoing journey in sustainability.\u00a0<\/span><\/p>\n

Bamboo Sushi has a policy of sourcing fish only from plentiful populations, caught using methods that don’t harm the ecosystem and avoid bycatch, from purveyors that provide full traceability of their product. It\u2019s therefore not a surprise that you\u2019ll also see the MSC logo\u2014which accompanies sustainable wild-caught seafood\u2014on their menu as well.\u00a0<\/span><\/p>\n

They have a long standing relationship with the Monterey Bay Aquarium and additional certifications held by the restaurant include James Beard Smart Catch\u2014 for which they have achieved Leader Status\u2014and the Green Restaurant Association. Bamboo Sushi is also one of the first restaurants in the world to become a certified B Corp, further evidence of their rigorous standards of social and environmental performance, accountability, and transparency.\u00a0<\/span><\/p>\n

To meet our mission to move aquaculture to a more sustainable basis, ASC is dedicated to working with partners of all sizes and Bamboo is one of our bigger partners, considering it purchased the largest amount of seafood in the state of Oregon.\u00a0 <\/span>Last year alone, Bamboo Sushi sourced over 200,000 pounds of seafood and nearly 80% of that volume comes from domestic sources,\u00a0 <\/span>which lowers their overall carbon impact. In fact, they\u2019ve set up a carbon calculator on their website to allow everyone to see their progress as they work to further minimise their footprint.\u00a0 <\/span>Not only that, but for every $1 earned, they\u2019re offsetting 0.1 tons of carbon by planting 5.76 square meters of seagrass through the Ocean Foundation’s Seagrass Grow Project. So far, that\u2019s translated to 15.2 acres of new seagrass to help prevent coastal erosion, provides important habit for aquatic life and safeguard the overall health of our oceans.\u00a0<\/span><\/p>\n
